Sweet Science: Make Your Own Ice Cream

For the most basic ice cream recipes, you require two indispensable ingredients: milk and sugar. Astonishingly, 9% of the milk produced in the United States is utilized in crafting ice cream. Although many low-fat ice cream and frozen yogurts are available for purchase, ice cream typically necessitates fat to establish a sturdy base and maintain its creamy, velvety texture. And the sugar, undoubtedly, makes it sweet.

But how do these ingredients harmoniously blend to create the sweet, chilly dessert we all adore? Typically, ice cream makers churn their ice cream. This process imparts a thick, creamy, and fluffy texture to the ice cream, incorporating 50% more air. For gelato, which is more custard-like and slightly denser, there's only about 30% air.

Fear not, for you don't need an ice cream maker to craft your own ice cream at home! All you require is a gallon-sized plastic bag, some ice, and salt.

To create your own ice cream, place four cups of ice in a large gallon bag along with a half cup of salt. In a small sandwich bag, combine a tablespoon of sugar, a 1/2 cup of half and half, and a teaspoon of vanilla extract. Position the sandwich bag within the gallon bag and shake vigorously for five minutes. Lo and behold, you should have ice cream within five minutes!

So, what happened? The salt in the gallon bag decreased the freezing point, enabling the crucial ice crystals to form within the bag. Combined with the shaking, you've created the perfect environment for ice cream to materialize.
